Spoke sizes question

Gents,

I got a NOS pair of Z-Rims in the mail today, I'm gonna build them up with large flange gold suntour hubs,

Question: What length spokes do I need ? And do I use standard nipples (fnaaar, fnaar!!)

178s should do the job long nipples are best.
