I've got various thickness flat spacers and one thick chunky "stepped" spacer ???
Any thoughts ?

stepped spacer could be the tophat washer for spiders etc. It should run like this:
drive arm
top hat
spider/chainring
spacers
bearings
spacer tube
bearings
spacers
non drive arm
use enough spacers either side to get the right chain alignment
