I have 3 builds on the go at the moment, all three have cranks fitted and I have the pedals but as yet I haven't fitted them.
Then I realised on all of my builds the last thing I fit is the pedals.
What about you?

Mine are all built the same way/order:
BB cups - easier to knock in without the weight of the forks
Headset
Seat clamp
Seat post
Seat guts and seat
Stem
I then flip the bike over, then
Tubes/tyres/wheels/valve caps
Bottom bracket/crank/chainring/spider
Pedals
Bike goes on the tyres right way up
Grips
Brake levers*
Front caliper and cable*
Rear caliper
Rear brake blocks lined up to rim
Bike goes back I've onto grips and seat
Back wheel gets pushed forward an inch in the drops
Chain gets split to correct length (inch and a half of slack)
Back wheel gets pulled back and tightened up
Fine adjust on brake blocks
Rear cable
Padset
*except my race bikes.

Brakes, hate setting them up, i always put it off until the last minute!

Chain for me. I hate fitting them so much, that i now get my local bike shop to fit it.

Haha made me laugh s.g! I do exactly the same, theres much less scope for damage when theyre being stored
